Ingredient
- 1000g wheat flour (SPB, Balance, Bamboo)
- 540g water.
- 5g bread improver.
- 60g sugars.
- 15g salt.
- 10g yellow instant yeas.
- 40g shortening or unsalted butter.
- 1 egg.

- Step 1: Mixing.
1. Weigh flour, instant yeast, and improver into the mixing bowl.
2. Dissolve sugar, salt, in water.
3. Put the water and egg mixture into the mixer and turn on speed 1 to mix the ingredients together.
4. Add unsalted butter or shortening and mix at speed 1 for 1 minute.
5. Then switch to high speed until the smooth dough, about 5-7 minutes.
- Step 2: Divide dough and shape.
1. Divide the dough into about 660 grams/1 piece or smaller depending on the size of the mold.
2. Shaping (by hand):
+ Roll the dough into a round shape and let it rest on the table for 5 minutes.
+ Use your hands to spread thinly to a length suitable for the length of the mold.
+ Roll into a cylinder then cut into 4 equal parts.
+ Turn each cut piece horizontally and put into the mold.
+ Cover the mold and let it ferment, fermentation time is 1 hour 20-1 hour 30 minutes (observe the dough 2cm from the surface of the mold).
- Step 3: Bake:
1. Bake at 220C degrees, 37 minutes.
