  • 1000g wheat flour (Golden Buffalo, Bamboo, CF, CF2, Fairy, JP1).
  • 650-660g water
  •  5g bread improver.
  • 2 pills Vitamin C
  • 1.5g red instant yeast.
  • 10g salt.

  • Mixing bowl.

  •  Step 1: Mixing.

1. Weight flour, instant yeast, improver into mixing bowl.
2. Dissolve Vitamin C, salt, in water.
3.Pour the water mixture into the mixer bowl and turn on speed 1 to mix the ingredients together.
4. Then turn to high speed until the smooth dough and thin network.

  •  Step 2: Divide dough and shape.

1. Divide the dough into about 80 gr/1 piece or smaller as desired.
2. Shaping (by hand): Roll the dough into round shape, smoothing the surface. Use your hands to spread the dough into a rectangle shape and then roll it up lengthwise. Roll the dough on both ends to make it smaller, the middle belly will swell. Place the dough on the tray to ferment for about 6 hours or less depending on the need for the bread to rise larger or smaller.

  •  Step 3 : Bake

1. Make 1-3 slits on the surface.
2. Bake at 240C degrees, 12 minutes (pay attention to spray water on the surface when you put it in the oven).
